Christmas Candy Cane Recipe
3 c Sugar
1 ts Peppermint flavor
1/2 c Water
3/4 c Lt. corn syrup
3/4 ts Red vegetable coloring
1/4 ts Cream of tartar
The sugar, the water, the syrup and the tartar that you add and heat until the sugar has broken down really well. Separate into two pans, bubble, but do not mix, if it is not too much trouble until each part is 280F. Add 1/2 ts peppermint to each package and add the hatching to one, not the other: place on a finish or marble table to cool. (Lubricate the table first if in doubt). Turkish Fruit Recipe
2 cups of granulated sugar
1/4 cups of water
1 lemon, the bar cut into strips, the juice crushed

4 tablespoons powdered non-flavored gelatin
2 tablespoons confectioner’s sugar
1 tablespoon cornflour
Break the crystal sugar in half of the water on medium heat. Add the lemon and orange bar segments and the juices. Heat the mixture to the boiling point and simmer for 15 minutes.
Relax the gelatin by absorbing the rest of the water for 5 to 10 minutes. Add the gelatin to the sugar syrup and mix for 10 minutes, until the syrup arrives at the rope stage. Sieve the mixture in a shallow tube holder or on saucers and leave for 24 hours.
Cut the candy into 1 inch squares. Filter the confectioners’ sugar and cornflour together in a shallow dish. Roll the pieces of treats into the blend. Keep the squares in boxes with more pastry sugar and cornflour between each layer.
